Quick and Easy


Banana Tortilla Snacks

A quick and satisfying banana treat, sweetened with peanut butter and honey.

  • 1 flour tortilla or wheat lavash
  • 2 Tbs peanut butter
  • Honey, to taste
  • 1 banana

Lay tortilla or lavash flat on plate. Spread with peanut butter and drizzle with honey. Place banana in the center and wrap the tortilla around the banana.

Broccoli and Cheese

A healthy way to satisfy your craving for something cheesy.

  • 1 bowl broccoli florets
  • 1 scoop cheddar cheese
  • Salt and pepper, to taste

Sprinkle cheddar cheese, salt and pepper over broccoli. Microwave 1 minute or until cheese is melted.


Small Snacks


Hot Spinach Dip

Will not give you super human strength, but it will garner you rave reviews if (and only if) you decide to share it with others at your table.

  • ¼ cup spinach
  • 1 scoop cream cheese
  • ½ scoop mayonnaise
  • ½ scoop parmesan cheese
  • Dash garlic powder
  • Dash hot sauce (optional)

In small bowl, microwave spinach for 30 seconds until cooked. Mix in cream cheese, mayonnaise, parmesan cheese, garlic powder, and hot sauce if desired. Return to microwave and cook for 20 seconds. Stir well and serve with pita bread, fresh vegetables, or tortilla chips.

Tomato Bruschetta

Give yourself the taste of Italian, regardless of whether or not it’s spaghetti night!

  • 1 garlic or onion bagel
  • 2 scoops chopped tomatoes
  • 1 scoop feta cheese
  • 1 ladle lite Italian dressing
  • Salt and pepper, to taste

Cut bagel in half and toast both sides. Cut each side into four pieces. In a bowl, toss tomatoes, feta, dressing, salt, and pepper until mixed. Top bagel with tomato mixture.

Baked Apples

Warm and tender. Delectable enough to be dessert!

  • 1 apple, sliced into small wedges
  • 1 pat butter
  • 1 scoop brown sugar
  • 1 scoop raisins
  • Dash of cinnamon

In a bowl, top apple slices with butter, brown sugar, raisins, and cinnamon. Microwave for 45 seconds or until butter is melted. Stir apples and return to microwave for 1 minute or until brown sugar begins to melt and apples soften. Continue to cook at 30 second intervals until apples reach desired firmness.

Breakfast Ideas


Stuffed Waffle Sandwiches

Breakfast in a sandwich. Perfect to grab-and-go.

  • 1 Belgian waffle, cut in ½
  • 2 scoops cream cheese
  • 1 banana, sliced
  • 1 scoop strawberry topping
  • ½ cup Grape Nuts cereal

Spread cream cheese evenly over ½ of the waffle. On the other half, spread strawberry topping. Chop banana into slices and layer slices over strawberry topping. Sprinkle Grape Nuts cereal over bananas. Top with remaining waffle half.

 

Waffle Dippers with Peanut-Cinnamon Sauce

Perfect as a quick breakfast or a small snack. The peanut butter packs enough protein to keep you full and focused throughout your morning classes.

  • 1 Belgian waffle, sliced into sticks
  • 2 Tbs peanut butter
  • 1 Tbs breakfast syrup
  • Dash of cinnamon

Cut Belgian waffle into sticks. In a small bowl, combine peanut butter, syrup, and cinnamon. Microwave for 30 seconds. Stir until sauce is mixed well. Dip waffle sticks into peanut-cinnamon sauce.

Strawberries and Cream Oatmeal

Oatmeal is one of the healthiest ways you can start out your day. Add strawberries to make it sweet and satisfying!

  • 1 bowl of oatmeal
  • 2 scoops strawberry topping
  • 1 scoop brown sugar
  • ¼ cup skim milk or vanilla soy milk

Mix strawberry topping and brown sugar into oatmeal. Top with skim or vanilla soy milk.

Bananas Foster Waffle

Have you ever wondered to yourself, “How could I make these delicious Belgian waffles even better?” This is how.

  • 1 Belgian waffle
  • 1 banana, sliced
  • 2 scoops brown sugar
  • 1 Tbs breakfast syrup
  • 1 pat butter
  • Dash of cinnamon

In a bowl, mix chopped banana slices, brown sugar, syrup, butter and cinnamon. Microwave for 30 seconds until butter is melted. Stir and return to microwave for another 30 seconds or until bananas are tender. Pour banana mixture over Belgian waffle.


Scrumptious Salads


Buffalo Chicken Salad

When you want to eat healthy, but just can’t pass up those dining hall chicken tenders…

  • 2 chicken tenders or 1 small grilled chicken breast, sliced
  • 1 tsp hot sauce, to taste (House Recipe, not Tabasco)
  • 1 plate lettuce blend
  • 4 grape tomatoes or 1 scoop chopped tomatoes
  • 1 stalk celery, chopped (optional)
  • 1 ladle regular or low-fat Ranch dressing

In small bowl, toss chicken with hot sauce. Top lettuce with baby tomatoes, celery, chicken, and dressing.

Arturo’s Salad

So tasty and sophisticated, you’ll think it came from an upscale restaurant.

  • 1 plate salad blend or spinach
  • 1 scoop raisins
  • 1 scoop feta cheese
  • 1 scoop garbanzo beans
  • 1 scoop sunflower seeds
  • 1 ladle balsamic or raspberry vinaigrette

On bed of lettuce, sprinkle raisins, feta cheese, garbanzo beans, and sunflower seeds. Drizzle vinaigrette over salad.


Creative Sandwiches


Inside Out Honey Soy Turkey Lettuce Wraps

Expensive Asian-Fusion restaurant taste, dining hall price. Low-carb anddelicious!

Wraps:

  • 4 deli turkey slices
  • 8 pieces lettuce mix
  • 2 cucumber slices
  • 1 scoop shredded carrots

Sauce:

  • 1 Tbs soy sauce (enough to fill bottom of small bowl)
  • 1 Tbs (small dollop) honey
  • Dash of ginger
  • Dash of garlic powder
  • Dash of sesame seeds
  • Dash of crushed red pepper

Lay two turkey slices on top of each other and fill with lettuce mix, cucumber, and shredded carrots. Roll turkey, securing fillings. Repeat with remaining turkey slices. In a small bowl, combine all remaining ingredients for sauce. Dip turkey wraps in sauce mixture. Or try dipping in hoisin stir fry sauce or sesame dressing.


Farmer’s Market Quesadilla

A wholesome and easy-to-make vegetarian sandwich.

  • 1 flour tortilla or wheat lavash
  • 1 scoop shredded cheddar cheese, divided
  • 1 scoop kidney, garbanzo, or black beans
  • Green peppers
  • Onions
  • Mushrooms

Lay tortilla or lavash flat on plate. Sprinkle half of the tortilla with ½ scoop of cheddar cheese. Top cheese with beans, peppers, onions and mushrooms. Sprinkle remaining cheese over vegetables. Microwave for 1 minute or until cheese melts. Fold tortilla in half and cut into fourths.


Garden Veggie Pizza Bagel

Satisfy your pizza craving with this healthy, simple Pizza Bagel.

  • ½ of a plain or wheat bagel
  • 1 scoop cream cheese
  • 1 ladle regular or low-fat ranch dressing
  • ½ scoop shredded carrots
  • Chopped peppers
  • Small broccoli and/or cauliflower florets
  • 1 scoop shredded cheddar cheese

Toast bagel and spread cream cheese on open side. Top cream cheese with carrots, peppers, broccoli or cauliflower, and cheddar cheese. Drizzle ranch dressing over top of pizza.


Monte Cristo Sandwich

A sophisticated sandwich, for the discerning dining hall connoisseur.

  • 1 egg bagel, toasted
  • 1 scoop cream cheese
  • 1 scoop strawberry jam
  • 1 slice Swiss cheese
  • 1 oz. deli turkey
  • 1 oz. deli ham

Cut egg bagel in half and toast. Spread cream cheese on half of the bagel and jam on other half. Top one half with Swiss cheese, deli turkey, and deli ham. Top with remaining bagel half.


Grilled BBQ Turkey and Bacon Sandwich

You can’t go wrong with turkey and bacon.

  • 2 slices bread of choice
  • 3 oz. turkey
  • 2 sliced tomatoes
  • 1 scoop bacon bits
  • 1 slice American cheese
  • BBQ Sauce

On slice of bread, layer cheese, turkey, tomatoes, bacon bits, and drizzle with BBQ sauce. Top with other half of bread and grill in panini grill until bread is toasted and cheese is melted.


Vegetarian Mediterranean Wrap

Indulge in the exotic tastes of the Mediterranean with this delicious, vegetarian wrap.

  • 1 flour tortilla or wheat lavash
  • 1 scoop hummus
  • ¼ cup lettuce mix or spinach
  • Red onions
  • Cucumbers
  • Black olives
  • Feta cheese (optional)

Lay tortilla or lavash flat on plate and spread evenly with the hummus. Top with lettuce, onions, cucumbers, olives, and cheese. Roll up wrap tightly, securing fillings.


Delicious Drinks


Cappuccino

Perfect for those cold Michigan days, or for when you need to perk yourself up for some late-night studying. Chocolaty and caffeinated—what’s not to love?

  • 1 packet hot chocolate mix
  • Coffee
  • Splash of chocolate milk (optional)

Pour hot chocolate mix into mug. Pour coffee into mug, leaving small amount of room at the top for milk. Pour in a small splash of chocolate milk if preferred. Stir well.


Delectable Desserts


Mock Fried Ice Cream

Get the taste of your favorite Mexican treat, all without leaving your dining hall!

  • 1 bowl soft serve ice cream
  • ¼ cup Cinnamon Toast Crunch cereal, crushed
  • Dash of cinnamon
  • Honey (optional)

Sprinkle crushed cereal and cinnamon over soft serve ice cream. Drizzle with honey to taste.


Ice Cream Sandwich

We all know ice cream is delicious. How can you make this scrumptious treat even better? Sandwich it between two cookies, of course.

  • 2 cookies, any flavor
  • ½ cup soft serve ice cream
  • Sprinkles

On bottom of one cookie, slowly spread soft serve until cookie is covered. Top ice cream with other cookie and roll in sprinkles.
